THE AMERICAN MARSHMALLOW COMPANY

For years marshmallow has had a stable group of consumers buying the candy but since several years markets are expanding rapidly and more and more people are growing fond of this highly aerated confection.

The first evidence of marshmallow being made has been found in Egypt where a type of marshmallow was produced by cooking sugar in combination with plant roots that gave the product stability.

After this cooking step the process was finished by chilling the syrup, whipping it and finally shaping it into ropes. Between the 19th and 20th century marshmallow production changed significantly. The plant root was traded in for gelatine which gave the product a much more stable candy over time with better eating properties.

The recipe has been changed many times and after a long period of time finally the marshmallow as it is still produced today was born. It all comes down to reducing the water content of the sugar syrup. Sugar, water and glucose are therefore cooked in a fully automated vacuum cooker to the required specifications.

Cooking is done under pressure to reduce cooking time and reach the desired moisture content. In two separate mixing tanks gelatine and water are mixed together until fully hydrated. The syrup is pumped towards the first scraped surface heat exchanger SSHE. Just before entering the SSHE the gelatine mixture is dosed into the syrup. To have full control this process is controlled by flow meters and the amount of injected gelatine is calculated as a percentage of the main flow. The quantity of air is measured by means of a mass flow meter and is dosed as a percentage of the main syrup and gelatine flow.

After the second heat exchanger a booster pump is installed to pump the product towards the colour and flavour injection system. For the whole system cold and warm water circuits are necessary.

These form an integrated part of the equipment and all different water temperatures are made by the TFT equipment and are recipe controlled from the main PLC.

On the colour, flavour injection system the main product stream is divided into 4 streams and different colour and flavour is injected into every stream. From this point the product is pumped to the different extruder manifolds positioned. The complete forming system consists of a mm wide 21 meter long conveyor onto which first a layer of starch is dusted and then mallow ropes are extruded. The exact form of the candy is determined by the shape of the extrusion nozzle.

After extrusion a second layer of starch is deposited onto the marshmallow to fully cover the candy before it is cut in the guillotine cutting device.

After cutting the products fall into a vibratory sieve to separate the starch from the candy. The starch is automatically re-used and transported back to the starch depositors. One of the advantages of a continuous system is that it is fail proof due to the reduction of human operation. Controlling the system is very easy and two operators can control the complete production line. All recipe parameters like the required capacity, product flows, product density, water temperatures are being monitored by the system itself and adjusted if necessary without operator interference.

By using this system the product characteristics remain uniform and consistent without being depended on which operator is adjusting the process parameters.

The cleaning programs of the equipment are stored in the operator panel as recipes. The complete system cleans itself by draining, flushing, adding chemicals, rinsing and drying.
